- One head of cauliflower
- 1/2c cup frozen peas
- 1/2c cup frozen cut up green beans
- 1/2c sliced carrots
- 1/4 diced onion
- 1 clove of garlic
- 2 eggs
- 1-2tbl of gluten free soy sauce or coconut aminos
- 1tbs of ghee or grass fed butter
Clean and cut up cauliflower into chunks, then add to food processor and process until rice consistency, set aside. In a large pan heat tablespoon of butter or ghee then add garlic, onion and veggies until soft, or the firmness you prefer. Add in cauliflower, cook with mix for a few min- then slide to the side of pan and add whipped eggs, cook, then mix all together. Add sauce at the end for your liking.
This makes a huge batch! You can use any veggies you have laying around and The great thing is, my boys thinks it’s rice!! WIN! WIN!
